Sofritas
Ingredients:
- 16 oz extra firm tofu
- 1 & ¼ tsp cumin seeds
- ½ tbsp dried oregano
- 2 tbsp chili powder
- 1 tbsp garlic powder
- 7 oz canned tomato sauce
- ½ cup vegetable broth
- ½ onion
- 2 small tomatoes
- 2 bell peppers
Directions:
- Blend cumin, oregano, chili powder, garlic powder, tomato sauce, vegetable broth, onion, tomatoes, and bell peppers until it reaches a slightly chunky consistency
- Press tofu block for 20 minutes, cut into rectangular "steak" pieces
- On medium heat, sear the tofu until slightly browned on both sides
- Place cooked tofu into food processor, blend until small pieces but still textured
- submerge tofu into the earlier mixture and let sit overnight
- When ready, heat mixture on medium heat for about 15 minutes, serve in desired capacity
(Optional: Heat up black beans and served in a bollio roll)
