Brussels Sprouts & Kale Salad
Ingredients:
- 1/4 cup fresh lemon juice
- 1/4 cup olive oil
- 2 tbsp dijon mustard
- 1 tbsp minced onion
- 1-2 minced garlic cloves
- 1/4 tsp salt
- Pepper to taste
- 1 bunch of kale
- 12 oz brussels sprouts
- 1 cup grated pecorino
Directions:
- Prepare the dressing by mixing together lemon juice, olive oil, dijon, onion, garlic, salt and pepper.
- Cut the hard end off of the brussels sprouts and chop finely.
- Remove center stem of kale and chop kale finely.
- Finely grate the cheese.
- Toss the kale and brussels sprout leaves together, add the dressing and cheese, and enjoy!
