Carol directs the center's programs for undergraduate and graduate students.  She coordinates the Sustainable Food Systems minor, designs, and supervises the immersive study program. She mentors a great team of student staff who assist with on-campus events, field trips, the center's videocast series, and marketing initiatives. 

Carol completed her Master of Arts degree in Counseling from Santa Clara University. She has a BS in Consumer Sciences from Purdue University and an AAS in Advertising and Communications from the Fashion Institute of Technology. She co-teaches BUSN 151A & B - Food, Hunger, Poverty, Environment Immersion, BUSN 132 - Contemplative Leadership and Sustainability Program (CLASP) and MGMT 42 - Leading from the Triple Bottom Line. She held many positions with Macy’s, including Buyer, Assistant Buyer, and Administrative Support Team supervisor. She championed the Bag Hunger Campaign for Macy’s (WV) for 4 years and volunteers at Second Helpings, a Hunger Relief and Culinary Job Training Program in Indianapolis, IN. 

She enjoys traveling and is an avid hiker and cyclist.
